Vegan Chocolate Pumpkin Pie – Vegan Pie Recipe 1/2 cup pumpkin puree 1 tbsp vegan margarine 1 cup vegan chocolate chips 1 tsp coconut oil 1 1/2 tbsp pure maple syrup 1.2 tbsp vegan butter Preheat the oven to 200C (Gas Mark 4).
In a medium bowl, combine the pumpkin pureed and margarine, vegan chocolate and coconut oils, and the vegan margarines. Mix well.
In a large mixing bowl, mix together the margarine, vegan butter and maple syrup, then mix until well combined.
Add the pumpkin mixture and mix to combine.
Pour the batter into the prepared baking dish.
3-4 Make the vegan pumpkin stuffing: 1 large vegan pastry bag (I use one small one for this recipe) 3 tbsp vegan cream cheese 1 teaspoon coconut oil (you can use a butter/lard combination, too) 1 large pumpkin 2 tsp pure maple 1 pinch sea salt Place the pumpkin in the prepared pastry bag and spread it out into a rectangular shape.
Add about a tablespoon of pumpkin pureing to each square of pastry.
Place the pumpkin on a baking tray and bake for around 20-25 minutes.
Remove from the oven and cool on a wire rack.
Add the pumpkin pie filling to the vegan pie crust and top with the vegan filling.
When you’re ready to serve, place the pie on a serving platter and top it with the remaining vegan filling and the pumpkin. Enjoy!
