Chicken Marsala Recipe: Healthy and easy to make
Chicken Marsalas are a favorite in many cuisines, and they’re incredibly easy to prepare and cook.
If you’re a fan of the spicy, garlicky flavor of chicken, you’ll love this chicken Marsala recipe.
It’s easy to prep and can be cooked in under an hour.
Ingredients: 1 large chicken breast, cut into bite-size pieces (about 6 ounces) 1 cup (240 ml) chicken broth (I like to use a chicken broth that contains 4.8 grams of protein per cup, and use 2.5 cups of chicken broth to reach this recommended amount), plus extra for serving 1 small onion, diced 2 cloves garlic, minced 2 cups (2 cups) dried red chili flakes 1 teaspoon kosher salt, plus extra to taste 1 cup unsalted butter, softened 1 tablespoon fresh cilantro, chopped 1 teaspoon garlic powder 1 teaspoon paprika, plus more to taste 2 tablespoons chicken stock 1/4 cup finely chopped cilantro leaves Directions: Preheat oven to 400°F.
Lightly grease a large baking sheet with cooking spray.
Place chicken breasts on a baking sheet and coat with cooking oil, then place them on a cookie sheet lined with parchment paper.
Season with salt and pepper to taste.
Using a sharp knife, slice chicken breasts in half lengthwise and discard the bone.
Cut each breast in half and place them into a bowl.
In a large mixing bowl, whisk together the chicken broth, onions, garlic, chili flakes, and salt.
Pour in the chicken stock, then whisk in the cilantro and season with paprika and garlic powder.
Add the chicken to the bowl and whisk until it’s all incorporated.
Add in the butter, and mix until combined.
Place the chicken on the prepared baking sheet, and spread out on the baking sheet.
Bake for 25 minutes.
Flip chicken halves over halfway through cooking.
Remove from oven and let rest for 10 minutes before serving.
