Eggplant parm-stuffed beef recipe – Easy and delicious!

I’ve always loved making this dish because it’s a little bit different than the other meatballs.
You don’t need any special equipment.
And the ingredients you need are simple: Beef, eggplant, cheese, tomatoes and lettuce.
You can also add a bit of avocado to make it extra healthy.
The best part is, this recipe is really easy and you don’t even need any ingredients that are hard to find at the grocery store.
I recommend that you add more cheese and some meatballs for this dish.
And I would also suggest to make sure that you serve the eggplant parmalettes on top of the beef so that the beef will cook a bit quicker.
I usually serve this dish with roasted garlic mashed potatoes and some roasted red peppers.
