You can make it the way I did.

The eggs add a nice bit of sweetness to the dish.

But there’s a bit more to it than that.

If you have the patience to cook for long periods of time, you can make this recipe a whole lot easier to make than it might appear.

You’ll have plenty of leftover eggplant to use.

Don’t forget to serve it with a drizzled chives or fresh cilantro.
